Apple Cake - Sharlotka

Ingredients

5 Granny Smiths apples (or 680 gr total not peeled)
1 tsp Cinnamon powder

6 large eggs at room temperature
200 gr sugar

170 gr plain flour
1/2 tsp baking powder

1 tsp vanilla extract

Method

Preheat the oven to 180C Fan.

1. Peel, core and slice apples, season them with cinnamon.

2. Equip your mixer with the whisk.
Crack eggs into a mixer bowl and whisk on the highest speed for 1 minute.
Gradually add sugar and whisk for 8 - 10 minutes or until it is big and fluffy.

3. Mix the flour and the baking powder.
Sieve it in three goes CAREFULLY FOLDING into egg mixture.
Make sure to scoop flour from the bottom of the bowl too.
Add vanilla extract, fold until the streaks are gone.

4. Reserve a handful of apples for later and fold the rest into egg mixture.

5. Line the bottom of the 25cm spring tin with parchment paper.

6. Pour mixture into a tin, level with a spatula and sprinkle reserved apples over the top.

7. Bake for 50-60 minutes or until golden brown. Let it cool for 15 minutes and remove from the tin.

Enjoy with the dollop of vanilla ice cream or a glass of milk.
