Bruschetta (Italian)
Ingredients
10 ripened plum tomatoes
1 tbsp balsamic vinegar
1 tbsp olive oil
1-2 cloves of garlic, depending on how garlicy you like it
6-8 leaves of fresh basil, finely shopped
Salt, pepper to taste
1 french baguette, a short one
50 gr soft cheese
Method
Finely chop tomatoes, leave in a bowl for 10 minutes.
Drain tomatoes of excess liquid.
Crush garlic into tomatoes, add olive oil, balsamic vinegar and basil, mix but do not crush well.
Season with salt and pepper to taste, it is important to do so.
Slice baguette on the angle, you need about 5-6 slices.
Sprinkle some olive oil on one side of each slice, grill for five minutes oiled side down, until the top is beginning to turn golden.
Spread a bit of a soft cheese onto a grilled side and spread a tablespoon full of tomatoes over it.
This is yummy.
