900ml hot water 450g toasted (brown) buckwheat 3/4 tspn salt 250 g bacon lardons 1 small onion finely chopped
Method
Fry bacon until cooked, take it out and fry an onion in bacon fat. Put bacon, onion, water and salt in a 2l pan, bring soup to boil, add buckwheat, stir once three times. Turn down the heat, put on lid, do not uncover until water can't be seen, in 15 minutes make three holes right to the bottom with the handle of a thick utensil, thickness of an index finger. After 5 more minutes, make holes again in the same place. Cook for futher 5 minutes. If the water is gone ... turn off.
