500g diced chicken thighs ~100g chorizo sausage sliced 1 red onion sliced 1 red bell pepper sliced into squares 4 garlic finely cloves chopped up 250ml chicken stock 40g tomato paste 1/2 tbsp cider vinegar 1/2 tsp paprika 1 tsp black pepper 1/2 tsp onion granules 1/2 tsp garlic granules 1/2 tsp chili flakes Olive oil for frying
Method
Fry with ample of olive oil, covered with a lid, stir every minute, vegetables and chorizo with a pinch of salt for 5 minutes. Add chicken and garlic, cover with a lid, fry it all for 2 minutes. Add chicken stock and spices and tomatoe paste. Mix all well, cover with a lid, bring to the boil. Half cover with the lid and cook for 15 minutes, until reduced and tasty. Serve with rice or pasta.
