Chicken Curry Soup
Ingredients
For broth ...
Liquids ...
400ml water
200ml coconut milk full fat (1 can)
Dry
3 tspn chicken stock powder
1 tbsp curry powder
1 tsp salt
3/4 tsp white pepper
1 red chilli, thinly sliced
1 tbsp lime juice
For garnish ...
2 spring onions chopped
2 handfuls frozen garden peas (defrost)
Thumb size piece ginger cut into matchsticks
Precooked chicken meat sliced
Or any precooked protein of your choice
Method
Mix dry with chicken stock first.
Add that and coconut milk into a pan and bring to the boil.
Precook chicken to your liking.
Precook rice.
Assemble ...
Add a portion of rice into a soup bowl.
And a portion of chicken on top.
Sprinkle spring onions and garden peas.
Poor broth over.
Sprinkle ginger.
Serve.
