Chinese Pork Ribs

Ingredients

Pork Ribs 1-2kg
1/3 cup sherry
5 tbsp dark soy sauce
2 cups chicken stock
3 tbsp brown sugar
6 star anise
3-4 cm root ginger
1 cinnamon stick
1 teaspoon chilli flakes
1/2 cup honey

Garnish:
3 spring (green) onions, shredded
2 tbsp chopped fresh coriander

Method

Blanch the ribs in a large pot of boiling water for a few minutes. Drain well and discard the water.

Add together all stock, sherry, star anise, ginger, cinnamon and chilli flakes and half of the soy sauce, brown sugar and honey then bring to the boil in a large pot.

Turn the heat down, add the ribs and coat in the sauce, simmer covered for about 2 hours or until the meat is tender.

Uncover and add the remaining soy, honey and brown sugar, stir gently until well combined and then simmer for about another 30 mins or until the sauce is reduced and forms a glaze.

Serve the ribs with spring onion and coriander sprinkled on top.
