Cold Beetroot Soup (Saltibarsciai)

Ingredients

240 gr cucumber shredded on a cheese grater
60 gr spring onion chopped
15 gr dill finely chopped
250 gr beetroot shredded on a cheese grater

2 tsp lemon pepper
1 tsp salt
1 tsp marjoram
1 L kefir, from a Polish section in ASDA
2 tbsp soured cream

Method

Mix all ingredients well, refrigerate.
Serve cold with a hard boiled egg per portion and boiled or pan fried potatoes.
