Goulash
Ingredients
900g-1kg shin beef or silverside beef, diced into roughly 1 inch cubes
400g white onions thinly sliced
2 medium size carrots, one thinly sliced and one grated (or about 300g total)
1 red pepper chopped into small chunks
3 cloves garlic, crushed
1-2 tablespoons tomato puree
1/3 cup pearl barley
Olive oil enough to cover bottom of casserole dish
2 bayleafs
5 allspice
2 teaspoons black pepper
2 teaspoons salt
2 tablespoons sweet paprika
900ml of good beef stock, can be a shop bought
Method
On a high heat soften onion, carrot and pepper so they soften (takes about 10 minutes).
Then add crushed garlic and tomato puree to the pan. Cook for a few more minutes.
Add all dry ingredients, spices and herbs. Mix to coat vegetables.
Add meat, mix well so meat ia coated in vegetables and prices.
Add beef stock, mix well, bring to the boil, then put into the oven at 140C (fan assisted).
After one hour remove, give it a stir and add the pearl barley, return to the oven for another hour.
Serve with mashed potato.
