Pickled Gherkins Lithuanian way

Ingredients

1 L water
100-200 ml white vinegar
4 tbsp sugar
2 tbsp salt
1 – 2 carots
1 – 2 white onions
A handful of fresh bay leaf
A handful of dill with stalks
Black pepper corn
Allspice corns
Mustard seeds
You can even add a chilli into a jar

This amount of marinade should be enough to pickle 2.5 kg gherkins.

Method

In an appropriate size pan add water, sugar, salt, vinegar.

Bring to the boil and boil further for 5 minutes.

Into each clean jar with screw on lids add aromats and spices:
8 black pepper corns
5 allspice corns
1 fresh bay leaf
1 Sprig of dill torn
3 thin slices of carrot
1 slice of white onion or finely chopped
10 mustard seeds

Prepare gherkins.
Wash them well in cold water.

Pack jars with clean gherkins.
Pour hot marinade over gherkins, fill the jars to the top.

Have a large flat bottom pan of boiling water on a stove.
Stand these jars in water up to the jar neck, lightly screw the lids on but DO NOT TIGHTEN THEM!

Bring water in the pan to the boil and boil for 15 minutes.

Take jars out of a pan one by one, tighten the lids, stand up side down on a kitchen towel and cover with another towel, let cool.

I am yet to find out how long they should pickle for :-)
