112 ml ice cold water 7-8 gr dry east 1/2 tsp salt 160 gr strong bread flour 15 ml olive oil
Method
1. In a mixing bowl add flour, dry yeast and salt. Mix to combine. 2. Dissolve sugar in water and add olive oil. 3. Turn mixer, with dough hook, on speed 2 and slowly add water mix into flour, knead for 20 minutes. 4. Shape a ball, put in a bowl and put in a fridge to rest for at least 6 hours. 5. Take out of the fridge, take the dough out, reshape, cover and leave to proof for 2 hours at room temperature. 6. Stretch and bake.
