250g Salted butter 2 tablespoons Dijon mustard Juice of half a lemon or 1 tablespoon of lemon juice 3 Cloves garlic, chopped 1 Mild red chilli chopped Small a bunch fresh parsley, chopped 1kg (2 lb) Medium fresh prawns - shells removed and deveined
Method
1. In a frying pan over medium heat, combine the butter, mustard, lemon juice, garlic, chilli and parsley 2. When the butter melts completely cook gently for a couple of minutes to allow flavours to infuse 3. Add prawns in a single layer 4. Cook prawns on one side until that side turns pink, then Turn them over until other side turns pink, they are now cooked, no not over cook 5. Portion prawns into shallow bowls and equally divide the butter mixture over them 6. Serve with fresh crusty bread
