Chicken Curry
Ingredients
2 large onions roughly chopped
4-5 cloves garlic, finely chopped
1 tin chopped tomatoes
400g cooked chopped chicken
3 tblespns medium curry powder
1 tspn turmeric
1/2 tspn salt
1 tspn pepper
Method
Coat bottom of frying pan with oil and heat
Add onions and fry for about 10 minutes in an open pan until soft and slightly caramelised
Add garlic and all spices to onions, coat onions and fry for 1 minute
Add tomatoes and a little hot water as needed to loosen the mixture
Simmer for about 10-15 minutes
Add chicken and warm it through (2-3 mins)
Serve
