Wholemeal white fluffy loaf

Ingredients

300 gr strong bread flour
150 gr wholemeal flour
9 gr salt

284 ml ice cold water
1 1/2 tbsp sugar
1 packet (7gr) of dry yeast

71 ml full fat milk

64 gr sunflower seeds

Method

Add flours and salt into a mixing bowl, mix well.

In a jug ...
Add water, sugar, yeast ... dissolve all.
Only then add milk, mix well.

Using dough hook start the mixer on number 2. Add the liquid mix. Knead for 5 - 10 minutes or 10 minutes by hand.

Leave it to prove for 2-3 hours.

Knock the air out and dump all into a greased baking tin and prove for 1 - 2 hours or until well risen.

Bake @ 230C (210C fan) for 30 - 35 minutes.

Remove from the tin and allow to cool.
